Jerkbait vs Crankbait

Why is it that all references to crankbaits say to make sure you are deflecting off of some type of structure but jerkbaits are made for more open water? Is it just the action of each? or that jerkbaits are more slender for a different appeal? I've never done very well on jerkbaits and would like to improve this year so I'm trying to understand.

Why not throw a crank out and work it like a jerkbait? Do the pause - jerk - pause? Why won't that be as effective? Especially in colder water where the wider body and bill would make it slower?
