I just bought that mold. Takes a 30 degree hook. The head he is describing uses a 90 and he wants a 1/0. Even if you modified it, that cavity wouldn't take a 1/0.
Another option would be the minnow head with a wire keeper. Not a very realistic head but you can at least put eyes on it.

Herring head underpin.
Specifically HHU-5-A
You can put a 1/0 5313 in the 3/8ths cavity. The collar and keeper will take up the entire hook shank. If you don't like that trim it off and whip finish a wb400 keeper on there.
Obviously you omit the insert...

I feel perfectly safe when I'm up there but I live in Stockton. I think most would agree that if and when we get some rain there will be a lot less complaining. Definitely feel for those folks living back in those canals though. Hope they get some relief this winter.

There hasn't been one single improvement made there since they started charging entry fees. Still have to use vault toilets. The docks at the ramps are garbage. Pegs missing as well as sharp metal protruding where you tie up. Makes you proud to be a taxpayer.

Keep the one you have. Sounds like you have a really nice boat already. The rod storage issue doesn't warrant getting a new boat IMHO. As far as suggestions I can't think of a glass boat rated for a 150 that will meet your size restrictions for storage. Don't think you'll be happy with a tin either....

I launched at Redbud a couple months ago at the lake's "highest" point for this year. I wouldn't launch there again but I'm overly cautious with my rig. Definitely use your trolling motor until you get out far enough to run the big motor.

My '19 Basscat had those little EPA California flap thingies installed in the filler necks. I was able to remove them both and it solved my problem. Not sure if that's the issue with your Ranger or if you can even access them but it might be worth a look.

Might fit the bill with a little modification
Re: Molds
I can't think of any mold with a head cavity that big that you could modify to fit a hook that small. You can make a Mustad 32746 1/0 work in the Minnow head mold but a 2/0 would fit better. If you want a heavier hook like the Gamakatsu 604 a 1/0 is a no go.

Make sure you cut off any hardware on the top two wires. Attach the centering pins directly to the wires. They'll spin if you have swivels in the mix.

For the Senko I'd probably go with the 893. For the other two techniques it would be a coin flip between the other two rods. Maybe if you were around docks or needed to be really accurate go with the shorter of the two?

I bet that Dobyns you mentioned would be a fun rig. I'd go with at least a 1500 or 2000 size reel though. Line can get a little squirrelly with a small diameter spool at times.
