I WAS THERE LAST CHRISTMAS AND RAN INTO A GUY WHO FISHED IN PLAYA DEL CARMEN. HE SAID THEY CAUGHT A LOT OF NICE FISH JUST OFFSHORE. I ALSO SAW A LOT OF FISHING BOATS AROUND ISLA MUJERES AND IN THE LAGOON NEAR THE CITY. ASK THE LOCALS, MOST SPEAK ENGLISH AND THEY COULD PROBABLY GUIDE YOU IN THE RIGHT DIRECTION. IF YOU HAVENT BEEN THERE BEFORE DONT HESITATE TO VISIT CHICHENITZA AND DEFINITELY GO TO ONE OF THE ECOLOGICAL PARKS. BEST VACATION I EVER HAD.

Puerto Morelos is 1/2 the distance from Cancun to Playa and is an awesome little fishing village as it is their livelyhood.
You can also dive/snorkel inside the reef on the way back in.

There are bigger boats down past Playa near Aukumel that do the big party boat fishing as well. But you are looking into a 1.2 hour drive from Cancun to get there.

You can also take the ferry out of Playa to Cozumel and find a charter while the wife/betterhalf gets to experience Playa.

But the fishing there is just not worth the overall cost unless you can get a small skiff from Puerto Morelos for a cheap day trip unless you get the spare chance to hook into a 16' Mako Shark like the people did next to us that went off shore alot further.
You know, we always called each other goodfellas. Like, you'd say to somebody: "You're gonna like this guy; he's all right. He's a goodfella. He's one of us." You understand? We were goodfellas, wiseguys.
